GEMS are back!
Limited edition GEMS are oysters that we bottom planted in the Fall of 2020. They were dive harvested this spring from the depths of the Damariscotta, and then set out on our lines to finish their grow out on the surface.
After three winters on river bottom, and a little vacation this summer in warmer waters, and with access to food that's more readily available on the top of water column than on the river bottom, these little oysters have had the time they needed to grow and mature to our satisfaction.
They have distinctly bright green shells, and they are a visual example of how much more food is available on the surface of the Damariscotta. The green tint is due to the phytoplankton that has adhered to the shell, which is the very same phytoplankton that these oysters feed on. They are 2.5-3", the perfect size for every oyster eater.

Very fresh oysters. Kept in the frig and they lasted the 10 days. Made oyster stew on the 10th day and finished the remainder of the oysters. Perfect size and opened real easy.
