Oysters come in all sizes, depending on your preference and how you plan to prepare your oysters, one size may be better suited than the other. Oysters don’t get tough or chewy as they mature, from petite to jumbo the texture and flavor of the meat is pretty consistent, the choice usually comes down to how big of a mouthful you’re looking for! Smaller oysters are great for a big crowd, if you have a diverse group of oyster eaters you may want to go with some smaller varieties that are less intimidating. For die hard oyster fans or for throwing on the grill or in the oven, we suggest going bigger! The larger, hardier shells will hold up to the heat, and the plump meat won’t disappear on you in the cooking process. Check out our recipes page for some delicious preparations!
Cocktails & Selects - What's the difference?
The main difference is size. Cocktail oysters are 2.5"-3" and are harvested at around 24 months, Select oysters are 3"-4" and are usually left to grow an additional year. Both oysters come from the same growing areas and share similar flavor characteristics - try our River Sampler to find your favorite!
