Carlisle Island Oysters are grown by our Operations Manager, Max Ritchie. Max started the farm last year, picking a site downriver of Glidden Point, in the lee of Carlisle Island, a small island island in the middle of the Damariscotta between South Bristol and Boothbay. This is his second year growing oysters, and all Carlisle Islands are surface cultured. This year, Max bought larger seed which have resulted in a market size product that is ready in less than a year. Carlisle Islands taste distinctly salty due to their proximity to the ocean and rich, with a taste akin to a long simmered broth.
