Seeded in upwellers for 5-6 months at the mouth of Maine's Royal River, then planted on the bottom of the hard packed mud flats on the river or Maquoit Bay, these larger oysters are certain to please.
Appearance: A thick and hardy green earth toned shell, proper cup often fluted, that holds up to any shucking knife.
Flavor: Robust oyster with earthy tones packing a punch of salt upfront, but balanced nicely with the minerality that come from the hard pack bottom.
Size: Approx 3.5"- 4.5"
Farm Description: Husband & Wife duo, Eric and Valy, own and operate, Flying Point in Maquoit Bay near Freeport, Maine. The two have been growing oysters for 20 years side by side and run a lean family operation, producing excellent bottom cultured oysters that can vary slightly in size due from one drag to the next.
