National Oyster Day is coming up on August 5. It’s a great opportunity for chefs, restaurants, seafood markets or distributors to build a bit of energy around a product that’s already has a loyal following. Whether oysters are a regular part of your menu or something you bring in for special occasions, here is a chance to feature them in a way your customers will remember.
Below are a few ideas we've shared over the years to our Glidden Point customers.
Build a Short-Term Feature or Flight
Offering a selection of oysters—ideally from a range of farms or regions—gives your customers a reason to try different varietals. We’re happy to help you build a lineup with distinct flavor profiles, harvest styles, or shell shapes.
Offer a Raw Bar Happy Hour
If you’ve have a bar or outdoor space, consider a time-specific happy hour with oysters and a short list of drinks. A few wine or beer pairings, a classic spritz, or a house cocktail/mocktail can go a long way toward driving volume.
Highlight the Farmer or Harvest Method
Giving people insight into what they’re eating is always appreciated. Was it bottom-cultured in the Damariscotta? Suspended in bags in a cold, tidal estuary? That context goes a long way. Our oyster spec sheets provide this information.
Keep it Hands-On
Some restaurants or markets have had success with quick “how to shuck” demos or letting customers try their hand with a house shucker nearby. If that feels like too much, a short card at the table or to take home with flavor notes or oyster basics still adds value.
Whatever you do, keep the offering focused. People don’t need twenty options—they need one or two done well. A clean chalkboard list or small printed menu makes it easier for your staff and your customers.
If you want help pulling together a curated shellfish offering for the week of August 5th, reach out early— I will be keeping a close eye on availability and I can help with choosing a specific size, salinity, or flavor profiles, just let me know.
