A boutique line of oysters grown in the cold waters of northern Casco Bay, named for the nearby Bustin's and Little Bustin's islands. Smooth shells, deep ladle-shaped cups, and a glowy caramel tone from a thin brush of surface algae — the signature of careful nursery work and tumbling by farmers Caitlin and Nicole.
In peak summer, Little Busters arrive brimming with meat: briny up front with a creamy, almost buttery finish. Founder Greg Foote swears the crew can taste the difference between an outgoing and incoming tide — that's how closely these oysters mirror their waters.
